On a beautiful spring day last weekend, Bill and I (well, mainly Bill) built a coffee table for our new conversation pit in the woods. We used scrap wood planks from the front deck. As the sun went down that evening, we rushed to make some guacamole to enjoy on the new coffee table.
Here's my guac recipe:
Guacamole
4 ripe avocados
1 lime, juiced
3 tablespoons cilantro, chopped
2 tablespoons red onion, diced
1 diced tomato
1/2 jalapeno pepper, seeded and diced
Salt and fresh pepper to taste
Roughly mash avocados, making sure to leave some chunks. Then stir in remaining ingredients. TIP: to safely handle the jalapeno peppers, use rubber gloves then clean your knife and board well.

For something a bit milder yet still flavorful, Bill suggests two small serrano peppers for the guacamole instead of the half jalepeno. ;-)
Though I handled the peppers way too much....and therefore had to avoid rubbing my eyes (a very difficult task during spring allergy season) for the next, oh, several days . . . .
